Chicken and Sausage Gumbo

Precook some chicken for the gumbo

Using the bones and some scrap veggies, go ahead and make some stock 

Heat up a cup of oil in your family's gumbo pot

Holy Trinity

Add 1 cup of flour and begin to make roux

Stir vigorously over medium high heat

Keep browning until you are satisfied. But don't let it burn

Add your chopped vegetables

This stops the cooking of the roux. Add red pepper, black pepper, salt, bay leaves, dried herbs and garlic

Stir in chicken and sausage

Add your homemade chicken stock

Bring to a boil and simmer until flavors marry and the rice is done

Serve with file, hot sauce, and plenty of rice

Wine Based Chili

1-2lbs. of ground meat
1 chopped onion
3 diced Serrano peppers
1 large can of crushed tomatoes
chicken stock or other flavorful liquid
wine to deglaze
cumin, paprika, red pepper, chile powder, thyme, salt, and pepper to taste

Brown meat then sweat onions and serranos 

Deglaze with red wine.

Add meat back to the party.

Add tomatoes and chicken stock or water and simmer.

Serve with whatever you have. Tonight I just had some Colby jack cheese.

This post isn't one of me cooking but it wouldn't feel right if I did not share this sandwich from Paseo in northern Seattle on my blog. It is one of the best sandwiches I have ever eaten. It was incredibly messy, but overflowing with slow roasted pork and jaw dropping bread.

Quick Asian Pork


Weekday Meal - Quick Asian Pork

Marinate pork in hoisin and soy sauce with some pepper

Chop half an onion, a clove of garlic, and 2 zucchinis

Sweat onions and garlic with salt, pepper, a little pork fat and some sesame oil

Add the zucchini

Quickly sear the thin slices of pork

I added a little soy to the cooking vegetables

Everything getting happy

Thin slices of pork served with brown rice and zuchinni
