This batch of beans is vegetarian. Typically beans are flavored with ham hocks or bacon but I didn't have any pork laying around today.

Sweat a diced onion and a couple jalapenos

Season with salt, pepper, cumin. Then add a few tablespoons of salsa and some beer if you'd like

Add 1lb. of beans that have soaked overnight

Cover with water and bring to a boil

Simmer for a couple hours until beans have finished cooking. Adjust seasoning of necessary

You can use any kind of enchilada sauce you want. I just used regular chunky salsa tonight but salsa verde or chili would be good.

Quickly dip your tortillas in some warm sauce so they dont break when you roll them

Add cheese to the tortilla

Roll and place in casserole dish

Roll more and linebthem up in the dish

Cover with your enchilada sauce

Top with more cheese

Bake until cheese melts (about 10-15 mins at 350 degrees)

Do your best to extract the goods

Simple Chili

This is a simple chili recipe that is cheap and easy to make. Pretty good for a weeknight that makes enough to save some leftovers. A note about beer: use a beer that you would gladly drink. Many people prefer darker beers in chili such as a bock or stout. This adds a great sweetness. Personally, I prefer to use a hoppy beer such as an IPA because I like the dry, earthy flavor it gives the chili.

First brown ~1 lb. of beef with salt and pepper then drain excess fat 

Dice 1 onion and 3 jalepenos

Sweat veggies with a couple tablespoons of chili powder, some cumin and paprika

Add the beef back in

Add about half a beer and a small can of tomato paste

Add 2-4 cups of water

Simmer to reduce for 30 minutes to an hour

Serve
